Recipe: Kaia's Raw Caramel Slice

Kaia's Raw Caramel Slice
Makes 1 small tray
Ingredients
Base
¾ cup of almonds
1 cup of dates
½ to 1 cup of coconut oil
Caramel Layer
2 cups of cashews (pre-soaked)
½ cup of maple or monkfruit syrup
1/3 cup of water
Chocolate Layer
¼ cup of coconut oil (melted)
¼ cup of maple or monkfruit syrup or medjool dates
¼ cup of cacao powder
1 teaspoon of vanilla
A pinch of Himalayan or celtic salt
Method
1. Place all of the base ingredients into a food processor and blend.
2. Press mixture into a tray with your fingers, flattening as you go.
3.Place in the freezer for 1 hour to set. Now place all of the caramel layer ingredients into your food processor adding water to get the right texture.
4. Pour this layer over the top of the base and place back in the freezer for 1 hour.
5. Finally, melt the coconut oil and blend with sweetener, cacao, vanilla and celtic salt for the chocolate layer.
6. Pour over the top of the set caramel layer. Place in the fridge or freezer and wait for another hour to set. It will be ready to serve.
